Ingredients
- 1 ½ cups brown rice, washed
- 300g skinless chicken breast, cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon pilau masala
- 2 ripe tomatoes, chopped
- 1 carrot, diced
- 2 tablespoons olive oil
- 3 cups water or low-sodium chicken broth
- Salt to taste
- Fresh coriander for garnish
Method
Sauté Aromatics:
Heat olive oil in a large pot. Sauté the onions until golden brown, about 5 minutes. Add garlic, ginger, and pilau masala, and cook for 2 minutes until fragrant.
Cook the Chicken:
Add the chicken cubes and cook until browned on all sides, about 6-8 minutes.
Add Vegetables and Rice:
Stir in the tomatoes, carrot, and brown rice. Cook for 5 minutes to allow the flavors to blend.
Simmer:
